Pesto and Kale Muffins
These delicious fluffy muffins are the perfect savoury snack. They also come in handy when you’re short on time at breakfast and want something you can enjoy on the go!
Makes 8 muffins
1 cup chopped kale
1 cup grated cheese/vegan cheese
1+1/2 cups all-purpose/gf flour
3 tsp baking powder
2 eggs/flax eggs
2 tbsp pesto
1/3 cup oil – I used @hempwholefoods
1/2 cup milk/plant mylk/water
1. Preheat the oven to 175C.
2. Mix the kale, cheese, flour + baking powder together in a large bowl.
3. Whisk the eggs/flax eggs, oil and milk in a separate bowl. Add to the dry ingredients and mix until just combined. Drizzle in the pesto and lightly stir.
4. Spoon the batter into a lined muffin tray.
5. Bake for 25 minutes
